Snickerdoodle Cookie Chex Mix

 

The perfect autumn snack mix, with cookies and cinnamon and all the good stuff

Ingredients
1/4 cup sugar
2 teaspoons cinnamon
1/4 cup flour
1 tube Pillsbury™ refrigerated sugar cookies
1/4 cup brown sugar
1 tablespoon corn syrup
1 tablespoon butter
1 cup whole pecans
3 cups Cinnamon Chex™ cereal
1 cup Chocolate Chex™ cereal (or 1 more cup of Cinnamon Chex™)
1 stick (1/2 cup) butter, melted
1 teaspoon vanilla extract

Directions
Heat oven to 350ºF.
Combine the sugar and cinnamon in a bowl.
Sprinkle flour onto work surface; knead flour into cookie dough. Tear off teaspoon-sized balls of dough and roll between your hands to create a smooth ball. Add all but 2 teaspoons of the cinnamon sugar to a gallon-sized zip-top bag. Reserve the remaining 2 teaspoons of cinnamon sugar for later. Add the cookie balls to the bag and seal it. Gently toss the balls with the cinnamon sugar until all the cookie balls are coated.
Place the cookie balls 1 inch apart on a parchment-lined cookie sheet. Bake five minutes or until set. Remove and allow to cool. Reduce oven temp to 300ºF.

Meanwhile, place the brown sugar, corn syrup, and 1 tablespoon of butter in a heavy bottomed skillet. Place the skillet over medium heat. Stir the mixture until it comes together and bubbles. Add the nuts and toss well; cook for 5-8 minutes or until the nuts are toasted and caramelized. Stir the nuts often to ensure they don't burn. Transfer from the skillet to a plate lined with wax paper.

In a large bowl toss together the cereals, melted stick of butter, vanilla and 1-2 teaspoons of the remaining cinnamon sugar from earlier. Toss well and then spread out between two cookie sheets. Bake for 15 minutes at 300ºF, stirring once or twice during cooking. Remove and allow to cool. Once cool, add the cereal, snickerdoodles and pecans to a large bowl and toss well. Serve.

Safer Trees and Decorations
When purchasing an artificial tree, look for the label "Fire Resistant." Although this label does not mean the tree won't catch fire, it does indicate the tree will resist burning and should extinguish quickly.

When purchasing a live tree, check for freshness. A fresh tree is green, needles are hard to pull from branches and when bent between your fingers, needles do not break. The trunk butt of a fresh tree is sticky with resin, and when tapped on the ground, the tree should not lose many needles.

When setting up a tree at home, place it away from fireplaces and radiators. Because heated rooms dry live trees out rapidly, be sure to keep the stand filled with water. Place the tree out of the way of traffic and do not block doorways.
Cut a few inches off the trunk of your tree to expose the fresh wood. This allows for better water absorption and will help to keep your tree from drying out and becoming a fire hazard.

Use only noncombustible or flame-resistant materials to trim a tree. Choose tinsel or artificial icicles of plastic or nonleaded metals. Leaded materials are hazardous if ingested by children.

Never use lighted candles on a tree or near other evergreens. Always use nonflammable holders and place candles out of children's reach.
Take special care to avoid decorations that are sharp or breakable, keep trimmings with small removable parts out of the reach of children to avoid the child swallowing or inhaling small pieces, and avoid trimmings that resemble candy or food, which may tempt a child to eat them.

Wear gloves to avoid eye and skin irritation while decorating with spun glass "angel hair." Follow container directions carefully to avoid lung irritation while decorating with artificial-snow sprays.

Bright Ideas for Lights
Indoors or outside, always use lights that have been tested for safety by a recognized testing laboratory that indicates conformance with safety standards.
Check each set of lights, new or old, for broken or cracked sockets, frayed or bare wires, or loose connections, and throw out damaged sets.

Use no more than three standard-size sets of lights per single extension cord.
Never use electric lights on a metallic tree. The tree can become charged with electricity from faulty lights, and a person touching a branch could be electrocuted.

Before using lights outdoors, check labels to be sure they have been certified for outdoor use.

Fasten outdoor lights securely to trees, house walls, or other firm supports to protect the lights from wind damage. Use insulated staples to hold strings in place, not nails or tacks. Or run strings of lights through hooks (available at hardware stores).

Plug all outdoor electric decorations into circuits with ground fault circuit interrupters to avoid potential shocks.

Turn off all lights when you go to bed or leave the house. The lights could short out and start a fire.

Friendlier Fireplaces
Use care with "fire salts," which produce colored flames when thrown on wood fires. They contain heavy metals that can cause intense gastrointestinal irritation and vomiting if eaten. Keep them away from children. Do not burn wrapping papers in the fireplace. A flash fire may result, as wrappings ignite suddenly and burn intensely. Before lighting any fire, remove all greens, boughs, papers, and other decorations from fireplace area. Check to see that the flue is open

Impossible Pumpkin Pie Cupcakes

Recipe type: Dessert
Serves: 12 

Ingredients
⅔ cup all purpose flour
15 oz pumpkin puree
¾ cup sugar
2 large eggs
1 teaspoon vanilla
¾ cup evaporated milk
2 teaspoons pumpkin pie spice
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda
Whipped cream

Instructions
1. Line a 12-cup muffin tin with paper or silicone liners.
2. Preheat oven to 350 degrees.
3. In a bowl, whisk together flour, baking powder, baking soda, salt and pumpkin pie spice.
4. In a large bowl, whisk together pumpkin puree, sugar, eggs, vanilla and evaporated milk until well combined.
5. Add in dry ingredients and whisk until no streaks of flour remain and batter is smooth.
6. Fill each muffin cup with approximately ⅓ cup of batter.
7. Bake for 20 minutes and let cool for 20 minutes.
8. Remove cupcakes from pan and chill in the fridge for 30 minutes.
9. Top with whipped cream and sprinkle with more pumpkin pie spice or cinnamon on top and before serving.

Thanks to an undisclosed but sizable donation from Servpro of Fairfield, youths from the Vacaville Neighborhood Boys and Girls Club will get to attend a safe Halloween-themed golf tournament at Scandia, in Cordelia, on Oct. 24.

The event, sponsored by the Optimist Club of Solano County, formerly known as the Vacaville Optimist Club, and Scandia Family Fun Center. Youths are slated to enjoy "ghoulish nibbles," compete for awards for best costumes and team, and enter a spooktacular raffle contest.

 
The contribution came about during a Little Wing Connections Monthly Business Networking Luncheon at the Courtyard Marriott in Fairfield, organizers said. Servpro representative Kimi Blaine was inspired to sponsor children to play at the Optimist Club's Miniature Golf Tournament after hearing Anna Eaton, VNBGC executive director, speak. She approached Servpro owners, Sherry and Kelly McLean and Tom Swain, and the donation subsequently was made.

"Kids are the future," said Sherry McLean. "Not every child has the same opportunities, so when there is a way to help out, it's our place to stand up and fill the gap for them."

THANKSGIVING SAFETY TIPS

Thanksgiving is all about food and family - turkey, stuffing, sweet potatoes, pumpkin pie and family time.
